Ingredients For turf and surf

  • for the steaks:
  • 3 tablespoon unsalted butter { softened }
  • ½ teaspoon turbinado sugar
  • ¾ teaspoon steak seasonings
  • ¼ teaspoon fine sea salt
  • 2 – 1 inch thick strip steaks
  • LOBSTER TAILS:
  • 4 beautiful lobster tails { 6 ounces each }
  • 2 tablespoon unsalted butter { divided for each tail }
  • 2 meyers lemons { if you can’t find them use regular lemons but not the stuff you buy on the shelf }
  • 4 squares of foil

How To Make turf and surf

  • 1
    TO MAKE THE COMPOUND BUTTER FOR THE STEAKS:
  • 2
    Mix the first 4 ingredients together.
  • 3
    Spread on both sides of the steaks, and wrap in foil.
  • 4
    Let it sit out on the counter for 30 minutes then refrigerate till you are ready to cook it.
  • 5
    30 minutes before you grille the steaks, pull them out and let them come to room temperature. I cooked these 2 & ½ minutes per side…they were perfect!!!!!
  • 6
    TO MAKE THE LOBSTER TAILS:
  • 7
    Pre heat the oven to 450.
  • 8
    Lay each tail on the top of the foil, add ½ of each tablespoon of butter on the top and give them a good squeeze of lemon juice.
  • 9
    Wrap them tightly in foil and bake for 22 minutes { these were 6 ounces each } so cooking time would depend on how big the tails are.
  • 10
    Melt some salted butter and put it into small serving dishes so you can dip the lobster meat into it and garnish with more lemon wedges.
