Ingredients

  • 2 tablespoons extra virgin olive oil
  • salt - & cracked black pepper - to taste
  • 24 large raw shrimp, peeled and deveined
  • 3 tablespoons chilled, butter
  • 6 -7 clove minced garlic
  • 1/2 - juiced, fresh lemon
  • about - 1/4 cup chopped fresh parsley

How To Make the best scampi - cass's

  • Step 1
    Clean and rinse shrimp. Drain well and dry with paper towels. Season well with salt and cracked pepper.
  • Step 2
    Heat olive oil in a large skillet until is very hot. Add the shrimp and saute for about 2 minutes or until about halfway cooked. Shake the pan to move around.
  • Step 3
    Add the garlic and cook for about another minute. Moving the pan as it cooks. Or use a spatula, shaking the pan back n forth works best for me.
  • Step 4
    Now, add the butter and reduce heat and continue cooking till melted.
  • Step 5
    Stir in the parsley and lemon juice and plate immediately. I usually double the batch as they are delicious!
