Ingredients For shrimp and spinach pasta

8 ozspaghetti

1/4 tspsalt

2 Tbspolive oil

1 clovegarlic, minced

1 lblarge shrimp, peeled and deveined

2 candiced tomatoes, drained (28 oz each)

1/2 cwhite wine
-
3 Tbspchopped fresh parsley
-
3 Tbspchopped fresh basil

1/2 ccream cheese, softened
-
2 cfresh spinach, torn
-
1/4 cfresh grated Parmesan cheese
-
fresh ground pepper, to taste
How To Make shrimp and spinach pasta

1Bring a large pot of water to a boil; add salt.

2Cook pasta until al dente. Drain. Keep warm and set aside.

3Heat oil in a 10-inch skillet over medium heat. Cook garlic until tender; about 1 min. Do not burn.

4Add shrimp and cook 3-5 mins.

5Remove garlic and shrimp; set aside.

6Stir tomatoes, wine, parsley, and basil into skillet.

7Continue cooking and stirring occasionally until liquid is reduced by half; 10-12 minutes.

8Add cream cheese.

9Whisk or use an immersion blender until smooth.

10Add shrimp and continue cooking until heated through; 2-3 minutes.

11Add spinach.

12Toss until wilted; 1 minute.

13Combine spaghetti and sauce. Sprinkle with Parmesan cheese. Add fresh ground pepper and serve.
