Ingredients For shrimp and spinach pasta

  • 8 oz
    spaghetti
  • 1/4 tsp
    salt
  • 2 Tbsp
    olive oil
  • 1 clove
    garlic, minced
  • 1 lb
    large shrimp, peeled and deveined
  • 2 can
    diced tomatoes, drained (28 oz each)
  • 1/2 c
    white wine
  • 3 Tbsp
    chopped fresh parsley
  • 3 Tbsp
    chopped fresh basil
  • 1/2 c
    cream cheese, softened
  • 2 c
    fresh spinach, torn
  • 1/4 c
    fresh grated Parmesan cheese
  • fresh ground pepper, to taste

How To Make shrimp and spinach pasta

    Bring a large pot of water to a boil; add salt.

    Cook pasta until al dente. Drain. Keep warm and set aside.

    Heat oil in a 10-inch skillet over medium heat. Cook garlic until tender; about 1 min. Do not burn.

    Add shrimp and cook 3-5 mins.

    Remove garlic and shrimp; set aside.

    Stir tomatoes, wine, parsley, and basil into skillet.

    Continue cooking and stirring occasionally until liquid is reduced by half; 10-12 minutes.

    Add cream cheese.

    Whisk or use an immersion blender until smooth.

    Add shrimp and continue cooking until heated through; 2-3 minutes.

    Toss until wilted; 1 minute.

    Combine spaghetti and sauce. Sprinkle with Parmesan cheese. Add fresh ground pepper and serve.
