I wanted something healthy and found this at Washington State Dept of Health. Quick and so simple you won't believe how good this is.

1 1/2 lb
fresh bay scallops.
medium green peppers, cut into 1 1/2 inch squares.
1 pt
cherry tomatoes.
1/4 c
dry white wine.
1/4 c
vegetable oil.
3 Tbsp
lemon juice.
garlic powder.
black pepper, to taste.

How to Make Scallop Kabobs


  • 1Parboil (partially cook by boiling) green peppers for 2 minutes
  • 2Alternately thread peppers, scallops, and tomatoes on skewers.
  • 3Combine next five ingredients.
  • 4Brush kabobs with wine/oil/lemon mixture, place on grill (or under broiler).
  • 5Grill 15 minutes, turning and basting frequently.
