How to Make Scallop Casserole Supreme
1Sprinkle scallops with salt & pepper.
In 2 tablespoons of butter, cook vegetables until tender.
In a separate skillet, make cream sauce by melting 4 tablespoons butter, add flour and cook for 1 minute or 2 stirring constantly. Add milk, nutmeg and salt and cook until thickened.
2Preheat oven to 375 degree F.
Combine scallops, cream sauce and sauteed vegetables.
Grease a 1 1/2 quart casserole and add the scallop mixture, spreading evenly.
Melt remaining butter and combine with bread crumbs, mix in cheddar cheese.
Sprinkle evenly over scallops and bake for 25 - 30 minutes, or until golden.
3Great served with a tossed salad.
