Nana's recipe for Spaghetti and Clams:
This is a really quick recipe for busy nights
3 cans of chopped clams
1 can of baby clams
Chopped garlic (At least 6 cloves or to preference)
One stick of butter
Olive oil but I use light or Canola oil ( about 3/4 cup)
Red Pepper Flakes
Saute the garlic in the butter and oil until soft. Drain the clams and save the juice from them. Put the juice, parsley, red pepper flakes in the oil mix and bring to a boil. Let it simmer for about 5- 10 minutes and add the clams.
Put the water for the spaghetti on when you start the sauce and cook the spaghetti til preferred firmness while you simmer the sauce. Add a little of the pasta water to the sauce for your preference. I do not like dry spaghetti so I use this water.
Drain the pasta
Pour the sauce over pasta and add grated parmesan cheese and top with parsley leaves
This is my basic sauce.
One may add onions, wine and shrimp to this recipe for variety; It's all good. ENJOY!
