indian fish coconut curry

Ingredients
- 2 - boneless skinless fish fillets cod, haddock, catfish all work well
- 1 tablespoon olive oil
- 1 medium red onion diced
- 1 - sweet chili pepper seeded and diced
- 3 cloves garlic minced
- 1 large tomato skinned and diced
- 1 teaspoon garam masala
- 1 teaspoon indian curry powder
- 1 teaspoon salt
- 1 cup coconut milk
- 1/2 cup water
- 1/2 cup ketchup
- 1/4 cup fresh cilantro chopped
- 1 tablespoon fresh ginger minced
- 1/2 cup dry white wine
How To Make indian fish coconut curry

Step 1Cut fish into desired size pieces sprinkle with salt and set aside.

Step 2Add oil to pan. Add onion, ginger, garlic, and chili pepper. Saute 5 minutes. Deglaze with white wine. Let almost all evaporate. Add tomato, garam masala and curry powder. cook 2 minutes breaking up tomato.

Step 3Add in coconut milk, water and ketchup. Simmer 2 minutes. Add fish and cook another 4 minutes or until fish is done.

Step 4Serve over rice and garnish with cilantro.
