Just the right heat and a secret ingredient of my own. Ketchup. That's right ketchup makes this sauce amazing.

Ingredients

  • 2 - boneless skinless fish fillets cod, haddock, catfish all work well
  • 1 tablespoon olive oil
  • 1 medium red onion diced
  • 1 - sweet chili pepper seeded and diced
  • 3 cloves garlic minced
  • 1 large tomato skinned and diced
  • 1 teaspoon garam masala
  • 1 teaspoon indian curry powder
  • 1 teaspoon salt
  • 1 cup coconut milk
  • 1/2 cup water
  • 1/2 cup ketchup
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon fresh ginger minced
  • 1/2 cup dry white wine

How To Make indian fish coconut curry

  • Step 1
    Cut fish into desired size pieces sprinkle with salt and set aside.
  • Step 2
    Add oil to pan. Add onion, ginger, garlic, and chili pepper. Saute 5 minutes. Deglaze with white wine. Let almost all evaporate. Add tomato, garam masala and curry powder. cook 2 minutes breaking up tomato.
  • Step 3
    Add in coconut milk, water and ketchup. Simmer 2 minutes. Add fish and cook another 4 minutes or until fish is done.
  • Step 4
    Serve over rice and garnish with cilantro.
