"crab" cakes
Since I'm allergic to seafood I don't cook it very often. Sometimes just the smell will make me sick. LOL However, hubby loves it and this is one of his special request from me. I use imitation crab for this recipe since fresh crab where I live is not easily available. ALSO PLEASE MAKE SURE IF YOU HAVE AN ALLERGY TO SEAFOOD YOU WEAR GLOVES TO MAKE THIS.

Ingredients
- 2 - eggs, beaten
- 1/2 cup plain dry bread crumbs
- 1/4 cup lemon juice concentrate
- 1/4 cup sliced green onions
- 1/2 teaspoon dry mustard
- 1/2 pound imitation crabmeat, flaked
- - additional dry bread crumbs
- - vegetable oil
How To Make "crab" cakes

Step 1In medium bowl, combine eggs, 1/2 cup crumbs, lemon juice, green onions and mustard. Fold in crabmeat.

Step 2Shape into 8 cakes; coat with additional crumbs. In large skillet, brown in hot oil until golden on both sides. Refrigerate leftovers.
