Spinach-Cheese Pie

This dish is good anytime of the day or night and any season. This is one of the ways I can get my youngest son to eat his spinach. He always eats two pieces whenever I make this pie. I usually make two so that he can have some for another meal. Popeye would be so proud.

pie crust shell, unbaked
2 Tbsp
1/4 c
chopped, scallions
1-10 oz
pkg, frozen chopped spinach, thawed and well drained
2 large
eggs, beaten, slightly
1 c
ricotta cheese
1/2 c
parmesan cheese, grated
1 c
cottage cheese
3/4 tsp
1 dash(es)
1 dash(es)

How to Make Spinach-Cheese Pie


  • 1Preheat oven to 375 degrees. Place pie crust in a quiche dish or pie plate; set aside until your filling is ready.
  • 2Sauté scallions in butter until soft; add spinach to the pan and stir 1-2 minutes until heated through. Remove pan from heat to cool.
  • 3Mix eggs with the cheeses, salt, nutmeg, and pepper in a medium bowl. Stir in the cooled spinach mixture. Spoon into pie shell and bake for 45 minutes.
  • 4Serve hot, or cold. This pie is good either way.
