spinach-cheese pie
This dish is good anytime of the day or night and any season. This is one of the ways I can get my youngest son to eat his spinach. He always eats two pieces whenever I make this pie. I usually make two so that he can have some for another meal. Popeye would be so proud.

Ingredients
- 1 9-inch - pie crust shell, unbaked
- 2 tablespoons butter
- 1/4 cup chopped, scallions
- 1-10 ounce pkg, frozen chopped spinach, thawed and well drained
- 2 large eggs, beaten, slightly
- 1 cup ricotta cheese
- 1/2 cup parmesan cheese, grated
- 1 cup cottage cheese
- 3/4 teaspoon salt
- 1 dash nutmeg
- 1 dash pepper
How To Make spinach-cheese pie

Step 1Preheat oven to 375 degrees. Place pie crust in a quiche dish or pie plate; set aside until your filling is ready.

Step 2Sauté scallions in butter until soft; add spinach to the pan and stir 1-2 minutes until heated through. Remove pan from heat to cool.

Step 3Mix eggs with the cheeses, salt, nutmeg, and pepper in a medium bowl. Stir in the cooled spinach mixture. Spoon into pie shell and bake for 45 minutes.

Step 4Serve hot, or cold. This pie is good either way.
