Everyone has heard of Rueben Sandwiches, not too many have heard of Rachel's. My Mom would make these when I was a kid - we both didn't care for sauerkraut. I like to serve them with sweet potato fries.

Ingredients
- 4 slices pumpernickel bread
- 4-6 slices deli-style pastrami
- 2-3 slices baby swiss cheese
- 1 cup (about) cole slaw
- - spreadable butter or margarine
How To Make rachel sandwiches

Step 1Preheat griddle.

Step 2Assemble sandwiches: on two slices pumpernickel bread, pile pastrami, then layer cheese. Put two ice cream scoops of cole slaw on each sandwich. Top with remaining slice of bread.

Step 3Butter the outside of the top slice of bread. Place butter side down on griddle, butter top side. Cook until toasty, turn over, and toast remaining side. Slice and serve.
