pancake breakfast sandwiches to freeze
We always bought breakfast sandwiches to throw in the freezer for my husband to take to work. I decided to make my own. He loves the McGriddles at McDonald's so I made mine to resemble them.

These sweet and savory copycat pancake breakfast sandwiches will be a big hit with your family! They're similar to a breakfast fast food favorite, but making them at home is a more cost-effective way to enjoy them. With pancakes, eggs, sausage, and cheese, it's everything you love about breakfast in one sandwich. We brushed the inside of the pancakes with a little maple syrup for the perfect balance of sweet and savory. They take a while to make, but they can be prepped on the weekend, frozen, and thawed when you need a quick grab-and-go breakfast. We used an egg mold to make the pancakes just the right size. Premade frozen ones could be used too to save time.
Ingredients
- 2 packages Jimmy Dean sausage (32 oz total)
- 24 small pancakes
- maple syrup
- 12 large eggs
- 1 cup milk
- 12 slices cheese, your choice
- - salt and pepper, to taste
- - butter
How To Make pancake breakfast sandwiches to freeze

Step 1Preheat oven to 375 degrees F. Place sausage on a cookie sheet and smash it down flat. Make sure the cookie sheet has the rims on it.

Step 2Bake for about 15 minutes.

Step 3While the sausage is baking, start making your pancakes.

Step 4Butter one side of the pancakes. Brush that side with syrup. This will be the inside of the sandwich.

Step 5Whisk together 12 eggs with 1 cup of milk in a medium bowl.

Step 6Spray muffin pan. Place egg mixture into each cup.

Step 7Bake for 20 minutes or until the eggs are set and no longer runny.

Step 8When everything is done, make the sandwiches by layering sausage, egg, and cheese between 2 pancakes. Make sure the syrup side is on the inside so your hands don't get too sticky. Salt and pepper to taste.

Step 9Put each sandwich in a freezer bag and freeze. Take it out the night before. Let it defrost in the fridge. Microwave for a few minutes to warm up the sandwich.
