Hidemi Walsh

This is my husband favorite sandwich. Dip is a great ingredient to make sandwich. I used all ingredients he loves and made this sandwich for him.

Notes from the Test Kitchen:
This is a really good kicked-up grilled cheese! The onion dip is delicious. Combined with the spinach, tomato and bacon. Delish!

6 oz
half loaf of rustic ciabatta bread
1 Tbsp
unsalted butter, cut into half
1/4 c
minced sweet onions
2 oz
cream cheese
1 Tbsp
grated parmesan cheese
4 slice
4 slice
1/2 c
packed fresh baby spinach
2 slice
cheddar cheese
salt and pepper

1In a skillet, cook bacon without oil until crisp. Drain on paper towels. Then cut each bacon slice in half.
2Make onion dip. In a bowl, beat cream cheese and stir in onion and Parmesan cheese. Add salt and black pepper to taste. Mix well.
3Cut the bread horizontally into half. On the bottom of the bread, spread the onion dip, put spinach, tomatoes, bacon and cheddar cheese slices. Put the top of the bread to close sandwich.
4In a large skillet, melt 1/2 tablespoon of butter over medium heat, place the sandwich, bottom side down, into the skillet and cook until the bottom is golden brown.
5Take the sandwich out and place on a cutting board or plate. Melt 1/2 tablespoon of butter in the same skillet, return the sandwich, top side down, into the skillet. Cook until golden brown and cheese melts
6Take the sandwich out and place on a cutting board. Cut the sandwich into half and serve.
