lea's grilled cheese sandwich

I love grilled cheese sandwiches,this is my take on a Barefoot Contessa's original recipe. She adds crumbled bacon in her recipe.My husband likes me to add sliced ham to his sandwich,but he will eat it plain.It's delicious! My husband calls me Lea,hence the name.

Ingredients

  • - 1 c mayonnaise
  • - 1/4 dijon mustard
  • - 1/4 freshly grated parmesan cheese
  • - 1/2 t kosher salt
  • - 1/2 t freshly ground black pepper
  • - 12 slices sourdough bread
  • - 6 tablespoons butter,rm temp.
  • - 6 ounces gruyere cheese
  • - 6 oz provolone or extra-sharp cheddar
  • - 12 slices ripe tomatoes
  • - 6 slices fresh basil

How To Make lea's grilled cheese sandwich

  • Step 1
    Combine the mayonnaise, mustard, Parmesan, salt, and pepper in a small bowl. Lay 12 slices of bread on a board spread each one generously with the mayonnaise mixture. Grate the cheeses.Pile 1/3 cup grated cheese,two tomato slices and a basil leaf evenly on half of the bread slices.Press 6 slices on top,pressing together.Spread each slice lightly with butter. heat large grill and continue with recipe. When hot,cook sandwiches 2 to 3 minutes in batches until the bread is toasted and cheese is melted.Or,cook on a hot panini press. Cut in half and serve warm.
