Ingredients

  • 1 - 6-inch (3-ounce) pita bread
  • 1 1/2 tablespoons butter, softened
  • 2 1/2 ounces (generous 1/4 cup) plain or flavored prepared hummus
  • 5 ounces grilled (or roasted) sliced vegetables, such as bell peppers, zucchini, mushrooms, eggplant, onions and rapini
  • 1/2 ounce (about 1/3 cup) spinach
  • 2 ounces queso fresco cheese, sliced

How To Make grilled veggie pita press / queso fresco /hummus

  • Step 1
    Split pita crosswise so you have 2 circular pieces Butter outsides of both pieces. Spread hummus on unbuttered side of both pieces. Place 1 circular half hummus-side-up on panini grill. Top with grilled vegetables, spinach and queso fresco. Carefully cover with remaining pita half, hummus-side down, and press (or grill) until sandwich is heated through. Cut in halves or quarters to serve.
