This recipe comes from the north central West Virginia city of Fairmont. Different areas of West Virginia have different hot dog sauces depending on the cultural and ethnic background of their inhabitants. Also different area of the state refer to it as chili or sauce, in central WV it's called sauce, in southern West Virginia it's called chili.

Ingredients
- 1 cup finely chopped onions
- 5 pounds ground beef
- 1 tablespoon black pepper
- 1/4 pound ground pork
- 1 teaspoon salt (adjust as needed)
- 3 tablespoons chili powder
- 4 teaspoons crushed chili flakes ( med hot)
- 32 ounces tomato sauce
- 14 ounces ketchup
- 6 ounces tomato paste
- 2 tablespoons olive oil
- 1/4 teaspoon cumin
- 1 dash tabasco sauce

Step 1In a large pot heat olive oil and add onions till just tinder but not browned, crumble hamburger and sausage and just cover with water, work with hands to break up ground meats. Cook on medium for 1 hour.

Step 2Add remaining ingredients and simmer for two more hours.

Step 3If you like a thinner sauce add more water half way through the final two hours. If you like thicker, simmer awhile longer uncovered.
