creole style shrimp loaves
This was a recipe I actually got from my God son, who asked me to make this for him and it was the best shrimp sandwich I ever had! His family is Creole and his grandmother use to own a resteraunt and I'm pretty sure the recipe was hers. For a sandwich, it's slightly time consuming as you must remove the tail from the shrimp, batter and fry, but for a meal, not that time consuming and I find them to be very filling.

Ingredients
- 2 lbs - raw jumbo shrimp (deveined and peeled))
- 3/4 cup corn meal
- 1/2 cup flour
- 2 - eggs
- 6 - french rolls
- - miracle whip or mayonaise (your preference)
- - lettuce
- - tomatoes sliced
- - sweet bread & butter chip pickles
- - tabasco hot sauce
- to taste - garlic salt, season salt, obay seasoning and pepper
How To Make creole style shrimp loaves

Step 1Clean shrimp, devein, peel and remove tail, then season

Step 2To make batter; beat eggs in small bowl, combine corn meal and flour in seperate bowl and coat shrimp in eggs, then in flour and corn meal mixture

Step 3Fry shrimp on medium to medium high heat or in deep fryer

Step 4While shrimp is frying, butter French rolls and toast in oven and slice tomatoes and lettuce for sandwiches

Step 5Once French rolls are toasted and shrimp is cooked, build sandwiches by first spreading miracle whip on rolls, then lining shrimp across rolls, then lettuce, then tomatoes, then pickles, then sprinkle desired amount of hot sauce
