bacon & gorgonzola “grilled” cheese

Grilled cheese and Bacon is my go-to dish. But sometimes I just don't want all the extra fat that comes from actually "grilling" it. I find that as long as the ingredients are premium, putting the sandwich in the toaster oven is a great alternative.

Ingredients
- 1 pound jalepeno flavored bacon
- 1 cup sweet maui onions, sliced
- 1 cup cremini mushrooms, sliced
- 1 pound gorgonzola cheese, crumbled
- 4 - honey wheat sandwich thins
How To Make bacon & gorgonzola “grilled” cheese

Step 11. Preheat oven to 400 degrees

Step 22. Cover a baking sheet with foil and lay a metal cooling rack on top.

Step 33. Lay bacon on rack and cook 20 minutes or til bacon is crisp.

Step 44. Transfer bacon to a paper towel lined plate

Step 55. Toss sliced onions and mushrooms in bacon grease and cook in over 15 minutes or until veggies are soft

Step 66. Pile ¼ of the veggie mix onto the bottoms of the sandwich thins

Step 77. Top each with ¼ of the gorgonzola cheese

Step 88. Cut the bacon slices in half and evenly distribute them on top of the cheese

Step 99. Sop up any remaining bacon grease with the insides of the sandwich thins tops

Step 1010. Put the tops on the sandwiches and cook in the toaster oven 5-7 minutes or til the cheese is melted and the sandwiches are browned.
