Ingredients
- 4 - lamb shanks
- 1 - leek, roughly chopped
- 4 - celery sticks, roughly chopped
- 2 - carrots, roughly chopped
- 2 - onions, roughly chopped
- 1 - garlic bulb
- 1 - bay leaf
- 1 tablespoon thyme leaves
- 1 tablespoon rosemary, chopped
- 500 milliliters chicken stock
- 250 milliliters red wine
- 150 milliliters port
- 100 grams dried apricots
How To Make lamb shanks cooked with wine & apricots

Step 1Preheat oven to 150C

Step 2Heat oil in large ovenproof casserole dish, big enough to take four lamb shanks & then some - cook shanks until browned & sealed on all sides, then remove from dish

Step 3Add all veg & garlic to the dish & cook, stirring, for 2 min.

Step 4Add herbs & put the lamb back in pan, placing it on top of the veg. Add the stock, wine, port & apricots (cut in half)

Step 5Put lid on & cook shanks in the oven for at least 2 1/2 hours, 3 hours is better, until meat falls off bone.

Step 6Serve with mash & green veg.
