It's about to get wild on the dinner table. This new pork casserole recipe I created is filled with shredded pork, diced ham and bacon.

Ingredients

  • 1 cup crumbled cooked bacon bits
  • 1 tablespoon margarine
  • 8 - baby carrots, chopped
  • 1 medium red onion,diced
  • 1 tablespoon olive oil
  • 3 cups fully cooked shredded pork
  • 2 cups diced ham
  • 1/4 teaspoon seasoned pepper
  • 1 bag frozen diced hash brown potatoes, thawed
  • 1 cup crumbled blue cheese
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 can condensed cream of chicken soup (10.75 ounces)
  • 3/4 cup whipped cream cheese
  • 1 cup sour cream
  • 1/2 cup bread crumbs

How To Make wild pork casserole

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Coat a 13x9-inch baking pan with cooking spray. Add crumbled cooked bacon bits.
  • Step 3
    Heat margarine in a large skillet over medium heat. Add chopped baby carrot and diced red onion and saute for 5 minutes or until tender. Remove from heat and transfer into a medium bowl.
  • Step 4
    Heat olive oil in a same skillet over medium-high heat. Add shredded pork and diced ham. Saute for 7 minutes and season with seasoned pepper.
  • Step 5
    Add hash brown potatoes and blue cheese in a prepared baking pan.
  • Step 6
    In a large bowl, combine carrot mixture, ham mixture, 1 cup sharp cheddar cheese, soup, cream cheese and sour cream; mix together.
  • Step 7
    Spread pork mixture over potato mixture. Sprinkle remaining sharp cheddar cheese and bread crumbs on top.
  • Step 8
    Bake in preheated oven for 30 minutes.
