These wee size quiches make a great light lunch, and you can use either left over cooked ham or deli ham.

Ingredients

  • 12 - reduced-fat ritz crackers
  • 2 large eggs
  • 1 cup light cream
  • 2 cups shredded swiss cheese, i used reduced-fat
  • 1/3 cup cooked, chopped ham

How To Make wee-size ham and cheese quiches

  • Step 1
    Heat oven to 400. Lightly spray a 12-cup muffin tin w/ cooking spray. Place a cracker in each muffin cup.
  • Step 2
    In bowl, combine remaining ingredients. Spoon mix equally into muffin cups. Bake until golden brown, 20 mins.
