spicy double pork stew
If you like spicy sauce this one will do it. You can spice it up more the way you want it by adding more chipotle peppers. I can only use one. It is great over pasta or mashed potatoes. You can throw it in a taco or burritos too.

Ingredients
- 1 1/2 pounds pork butt or shoulder cut into medium chunks
- 1 large onion quartered
- 4 cloves garlic
- 1/4 teaspoon each marjoram and thyme
- 2 - bay leaves
- 1/2 pound ground pork or sausage
- 1 large onion diced
- 4 cloves garlic minced
- 15 ounces can crushed tomatoes
- 1 - chipotle pepper in adobo sauce or more to your liking
- 1/4 teaspoon each marjoram, thyme, and oregano
- 1 tablespoon cider vinegar
- 1/4 cup cilantro chopped
- - salt and pepper to taste
- - splash of dry white wine
- 1 cup reserved pork juices
How To Make spicy double pork stew

Step 1Place the pork and next five ingredients in a crockpot and add enough water just to cover pork. Cook on low 6 to 8 hours. Remove pork and shred. Strain the broth and reserve 1 cup.

Step 2Add some oil to a large skillet. Brown the ground pork with the chopped onion, and garlic. Throw a splash of white wine and scrap up bits from bottom and let most evaporate.

Step 3Add the shredded pork, tomatoes,reserved broth, chipotle and seasonings. Bring to a boil and reduce to a simmer and simmer for 15 to 20 minutes. Remove from heat and stir in vinegar and cilantro
