3 1/2 to 4 pounds st. louis style cut rib slab
recipe Texas "Grillin" Rub
3 Tbsp
worcestershire sauce
hickory and mesquite wood

How to Make Smokin' St. Louis Cut Ribs - Texas Style


  • 1Get your smoker going and bring the temperature up to 235 - 250 degrees.
  • 2Prep your ribs if needed and rub the slab down on both sides with half a recipe of grillin' rub. Let rest 30 minutes while smoker is heating up.
  • 3Place slab meat side down. Smoke for 45 minutes.
  • 4Flip and smoke for another 45 minutes.
  • 5Bring them inside and place them on aluminum foil. Drizzle with the worcestershire sauce and wrap them.
  • 6Place back on the grill for another hour.
  • 7Bring them back inside and brush with your favorite bbq sauce.
  • 8Place them back on the grill to caramelize for 30 minutes. Enjoy!
