I saw a recipe for Amish Ham Casserole. I didnt have Ham and wanted to make it so I used smoked sausage instead. I also added some other items I had on hand and Smoked Sausage Casserole was born...

Ingredients

  • 4 cups hash brown potatoes, frozen
  • 1 medium onion, diced
  • 1 small bell pepper
  • 1 can corn
  • 1 cup minute rice (cooked according to package)
  • 6 large eggs
  • 1/2 package smoked sausage sliced then quartered
  • 1 cup shredded mozzarella
  • 1 1/2 cups small curd cottage cheese
  • 1 tablespoon dried parsley
  • - cayenne pepper (to taste)
  • 1/2 cup frenchs onion crumbled

How To Make smoked sausage casserole

  • Step 1
    Preheat oven to 375.
  • Step 2
    In a large bowl mix thawed hash browns, diced onion, diced peppers, cooked rice, corn, mozzarella, cayenne, dried parsley.
  • Step 3
    Add eggs and cottage cheese and mix everything well.
  • Step 4
    Pour into a greased 13x9 baking dish. I sprinkled the Frenchs Onions on top but you can leave that out.
  • Step 5
    Bake uncovered for about 45 mins to an hour or until its set and the top is bubbly.
  • Step 6
    Let stand for about 15 mins before cutting.
