Ingredients

  • 4 c
    hash brown potatoes, frozen
  • 1 medium
    onion, diced
  • 1 small
    bell pepper
  • 1 can(s)
    corn
  • 1 c
    minute rice (cooked according to package)
  • 6 large
    eggs
  • 1/2 pkg
    smoked sausage sliced then quartered
  • 1 c
    shredded mozzarella
  • 1 1/2 c
    small curd cottage cheese
  • 1 Tbsp
    dried parsley
  • ·
    cayenne pepper (to taste)
  • 1/2 c
    frenchs onion crumbled

How to Make Smoked Sausage Casserole

Step-by-Step

  1. Preheat oven to 375.
  2. In a large bowl mix thawed hash browns, diced onion, diced peppers, cooked rice, corn, mozzarella, cayenne, dried parsley.
  3. Add eggs and cottage cheese and mix everything well.
  4. Pour into a greased 13x9 baking dish. I sprinkled the Frenchs Onions on top but you can leave that out.
  5. Bake uncovered for about 45 mins to an hour or until its set and the top is bubbly.
  6. Let stand for about 15 mins before cutting.
