Ingredients

  • 2 large yellow or zucchini squash or both
  • 1 package sweet italian sausage meat
  • 1 package stuffing mix, herb-seasoned
  • 2 tablespoons parsley, italian chopped
  • 1 pinch salt and pepper
  • 3 tablespoons fontina cheese,shredded
  • 1 clove garlic,minced
  • 3 tablespoons onion,minced
  • 2 tablespoons olive oil
  • 1 cup chicken broth

How To Make sausage stuffed squash

  • So,so good!! :)
    Step 1
    Slice the squash in half lengthwise,using a spoon remove and discard the seeds,pulp from the squash.

    Step 2
    Saute the onion and garlic in oil until soft,season with salt and pepper,add the sausage meat and brown evenly. Add the chicken broth,stuffing mix and parsley,combine well and remove from heat.

    Step 3
    Using a tablespoon fill each squash cavity with the stuffing mixture,top with shredded cheese the sprinkle with grated cheese.
  • So,so good!! :)
    Step 4
    Lightly spray a cookie sheet or casserole dish with cooking spray,arrange squash in the tray and bake at 350 degrees for 25-30 minutes or until the cheese has melted and browned slightly. Remove and serve immediately with your choice of sides. I served this over linguine pasta with a light marinara sauce,got rave reviews!! Enjoy!! :)
