This is one of "our" earliest recipes. It's elegance, ease of prep, and earthy flavors made it an instant favorite in our house. We found it in the Most Expensive Cookbook in the World (Great American Recipes card set).

Ingredients

italian or pork sausages
2 Tbsp
oil
1 medium
onion, chopped
1
green or red pepper, chopped
2 large
sprigs parsley, chopped
15 oz
tomato sauce
1/2 c
white wine, optional
1 large
clove garlic, minced
1 tsp
dried oregano leaves
1
bay leaf
salt and pepper, to taste

How to Make Sausage Cacciatore

Step-by-Step

  • 1Heat the oil in a large skillet. When the oil is hot, brown the sausage all around. Remove sausage and set aside.
  • 2Add the onion and green pepper to the pan and saute for 3 minutes.
  • 3Add tomato sauce, white wine, garlic, parsley, oregano and bay leaf. Stir to mix well. Place sausage in pan. Stir to mix well again. Cover.
  • 4Simmer over low heat for about 30 minutes or until the sausages are cooked.
  • 5Salt and pepper to taste.
