puerto rican rice and beans

Mom started making this dish when we moved to Puerto Rico in the early 70's. It became a family favorite and takes me back to that place and time with each bite.

Ingredients

  • 2 - ham steaks, cubed
  • 1 large onion
  • 1 large bell pepper
  • 4 cloves garlic
  • 1 can tomato sauce
  • 2-3 cans water (tomato sauce can)
  • 1 tablespoon oregano, dried
  • 1 tablespoon cilantro, dried (i use a small bunch of fresh, minced)
  • 1/2 teaspoon black pepper
  • 2 cans favorite pinto beans (or can use homemade)

How To Make puerto rican rice and beans

  • Step 1
    Brown diced ham in oil
  • Step 2
    Add onion, garlic and bell pepper and saute with ham
  • Step 3
    Add tomato sauce & water along with oregano, cilantro and pepper
  • Step 4
    Simmer for 30 min., covered
  • Step 5
    Add 2 cans of pinto beans, cover and simmer 1 hour (you may need to add a little water after adding beans, use your judgement)
  • Step 6
    Remove from heat and serve over rice
