- cut Pork in half...not all the way ( like a flap)
- salt/pepper both sides.....rub the smashed garlic on one side and place the bacon strips...
- fold over and tie with cooking string....bake uncovered for about 45 mins at 350 degrees..until cooked through and crispy golden brown....let cool and slice..delicious.. drizzle mojo over the sliced pieces before serving
