This is my one of my family's favorite meals.The boys like it as a tostada ,my husband and I prefer it eaten as a one dish meal with flour tortillas. I think for the bereavement meal we will serve it as a one dish meal and have warm corn and flour tortillas.

Ingredients

  • - 3 lbs boneless pork roast
  • - 1 lb pinto beans
  • - 4 cloves garlic,minced
  • - 1 1/2 t dried oregano
  • - large can diced green fire roasted green chilies(mild)
  • - 1 t salt or to taste
  • - chicken broth
  • TOPPINGS:
  • - shredded cheese
  • - shredded lettuce
  • - chopped onion
  • - chopped tomato

How To Make pork chalupa

  • Step 1
    Combine pork,beans and seasonings in large pot.Add enough broth to cover meat.Cover and simmer about 6 hrs.Break up meat and cook,uncovered until thick,an additional hour. Place chalupa on top of fried tostada shell or place in a bowl ,eat as a stew adding all or some of the toppings and eat with warm tortillas.
