pork medallions with cheesy potatoes
Comfort food all the way!!! This is an old fashioned dish that I love and tweaked. Garlic, onion, cream, sirloin Pork chops and cheese in one dish. It is savory and delicious. The Pork paired with the potatoes makes for a complete dinner. Just add a side of veggies and enjoy!

Ingredients
- 4-5 - sirloin pork chops cubed
- 4 tablespoons butter divided
- 7 - russet potatoes medium- large size
- 1 - large onion sliced and halved
- 4 cloves chopped garlic
- 1 tablespoon plus 1 tsp soy sauce
- 1/2 teaspoon dried dill weed
- 1/2 teaspoon dried rosemary or 1 sprig fresh needles pulled off
- 3/4 teaspoon garlic salt
- 1/2 teaspoon thyme
- 1/2 teaspoon parsley flakes
- 1/2 teaspoon ground black pepper
- 1 cup heavy cream
- 2 cups mozzarella cheese
- 1/2 pound optional- bacon cooked and crumbled
How To Make pork medallions with cheesy potatoes

Step 1(Optional -Cook bacon. crumble and set aside.) Peel potatoes and chop in to quarters or 6th's depending on the size. Place in salted water and boil. cook until done but still firm. (not falling apart)

Step 2While potatoes are in cooking. Cube the pork in to 1-2 inch chunks

Step 3On med high heat melt 2 tablespoon butter. Add pork and cook for 10 minutes stirring to cook. Add soy sauce and cook for 2 minutes stirring with spatula. Remove pork to a platter cover with foil. Heat oven to 400 degree's.

Step 4In the pan add 2 tablespoons butter. Add onion and cook until done. Add garlic and sauté with onion for 1 minute. Do not brown garlic.

Step 5Potatoes should be cooked. Drain potatoes. Toss potatoes with Garlic and onion. Heat cream in microwave until it boils. Pour over potatoes.

Step 6Add the herbs and Garlic salt and pepper to potatoes. Toss gently. Pour in to a 9x13 pan.

Step 7Top potatoes with pork. Place in oven covered. Bake for 20 minutes. After 20 minutes sprinkle with Mozzarella. Place back in oven uncovered. Bake about 20 more minutes until cheese is melted in nicely. Sprinkle crumbled bacon over dish and Serve!
