An amazing way to prepare a roasted pork loin. It's easy enough to make any day of the week, but fancy enough to serve on a special occasion. Dijon mustard adds a touch of tanginess and the crust is crisp. The pork loin is tender, juicy, and slices like butter. We really enjoyed the creamy peppercorn sauce. There's a bit of peppery spice but it's not overpowering. If you're sensitive to peppercorns, you might want to cut back on them a bit.

Ingredients
- 1 - lean pork loin roast (2 1/2 lbs)
- 3 tablespoons Dijon mustard
- 1 tablespoon low-fat buttermilk
- 1 cup bread crumbs
- 2 tablespoons pepper
- 2 teaspoons crushed mix peppercorns
- t teaspoon chopped thyme
- 1/4 teaspoon salt
- CREAMY PEPPERCORN SAUCE
- 3/4 cup buttermilk
- 1/3 cup fat-free sour cream
- 3 tablespoons Parmesan cheese, grated
- 3 tablespoons mayo
- 1 1/2 tablespoons lemon juice
- 1 1/2 teaspoons mixed peppercorns, crushed
- 1/4 teaspoon salt
How To Make peppercorn crusted pork loin with creamy sauce

Step 1Preheat oven to 325 degrees.

Step 2Combine mustard and buttermilk.

Step 3Spread over roast.

Step 4Combine bread crumbs, pepper, salt, thyme, and peppercorns in a bowl. Press mixture evenly over roast.

Step 5Place roast on broiler pan coated with cooking spray. Bake for 2 hours and meat thermometer reads 160 degrees. Let stand 10 minutes before slicing.

Step 6Combine all ingredients for the creamy peppercorn sauce in a bowl. Serve with pork loin slices.
