One of our favorite dishes is a baked potato with barbeque on top but I wanted to come up with a different way of eating potatoes and barbeque and this is the recipe I came up with, now it is one of our favorites.

How to Make Nelda's Barbeque Casserole

Step-by-Step

  1. Boil potatoes until tender, drain. Add sour cream, butter, salt and pepper to potatoes and mash or cream(I use a potato masher but you can use an electric mixer). Butter a 2 quart casserole dish and put potatoes in the bottom of dish, top with cheese then with barbequed pork. Bake at 350 degrees for 20 minutes. I serve it with extra sour cream and my grandson likes Ranch dressing on his.
