nelda's barbeque casserole

One of our favorite dishes is a baked potato with barbeque on top but I wanted to come up with a different way of eating potatoes and barbeque and this is the recipe I came up with, now it is one of our favorites.

Ingredients For nelda's barbeque casserole

  • 5-6
    potatoes peeles and diced
  • 1/2 c
    sour cream
  • 1 1/2 c
    shredded cheddar cheese
  • 16 oz
    bowl of loyd's barbequed shredded pork or make your own
  • 2-3 Tbsp
    butter
  • salt and pepper to taste

How To Make nelda's barbeque casserole

  • 1
    Boil potatoes until tender, drain. Add sour cream, butter, salt and pepper to potatoes and mash or cream(I use a potato masher but you can use an electric mixer). Butter a 2 quart casserole dish and put potatoes in the bottom of dish, top with cheese then with barbequed pork. Bake at 350 degrees for 20 minutes. I serve it with extra sour cream and my grandson likes Ranch dressing on his.
