Nelda's Barbeque Casserole
5-6potatoes peeles and diced
1/2 csour cream
1 1/2 cshredded cheddar cheese
16 ozbowl of loyd's barbequed shredded pork or make your own
·salt and pepper to taste
How to Make Nelda's Barbeque Casserole
- Boil potatoes until tender, drain. Add sour cream, butter, salt and pepper to potatoes and mash or cream(I use a potato masher but you can use an electric mixer). Butter a 2 quart casserole dish and put potatoes in the bottom of dish, top with cheese then with barbequed pork. Bake at 350 degrees for 20 minutes. I serve it with extra sour cream and my grandson likes Ranch dressing on his.
