This is a great little meal that I love to cook and my hubby loves to eat. This is a typical Louisiana-style recipe that you cook in a slow cooker.

What a tasty and easy pork chop recipe. Smoky sausage alongside the veggies really gives this dish a great flavor. For flavor, make sure to use a good smoked sausage, similar to andouille. The pork chops are tender and melt-in-your-mouth good. Serve over rice with a couple of shakes of hot sauce and green onion for a real Louisiana-style dinner.

Ingredients For louisiana-style smothered pork chops

  • 4 oz
    smoked sausage, chopped
  • 3 Tbsp
    all-purpose flour
  • 1 tsp
  • 1/2 tsp
  • 4
    bone-in center-cut pork chops, 1 1/4-inch thick
  • 3 Tbsp
    vegetable oil
  • 1 pkg
    gumbo frozen vegetable mix (onion, celery, and bell pepper, 16 oz)
  • 14 oz
    chicken broth
  • 1/2 tsp
    dried thyme
  • 1 Tbsp
    corn starch
  • 2 Tbsp
  • hot cooked rice
  • 4
    green onions, sliced
  • hot sauce, optional

How To Make louisiana-style smothered pork chops

  • Sausage sauteeing in a skillet.
    Saute the sausage in a large skillet over medium-high heat until browned.
  • Sauteed sausage on a paper towel to drain.
    Remove the sausage to paper towels to drain. Reserve the drippings in the pan.
  • Pork chops in a bag with flour, salt, and pepper.
    Combine the flour, salt, and pepper in a large zip-top bag; add the pork chops. Seal the bag and shake to coat.
  • Adding oil to the skillet.
    Add the oil to the drippings in the skillet.
  • Browning the pork chops.
    Cook the pork chops in the oil over medium-high heat for 3 minutes on each side, or until browned.
  • Pork chops in a slow cooker.
    Transfer the chops to a 5 or 6-quart slow cooker.
  • Sausage and veggies layered over pork chops.
    Layer the vegetable mix and sausage over the pork.
  • Adding chicken broth to the slow cooker.
    Add the broth and thyme.
  • Setting the slow cooker.
    Cover and cook on low for 6 hours.
  • Cooked pork chops in a baking dish.
    Remove the pork chops from the slow cooker; cover and keep warm. Increase temperature to high.
  • Corn starch and water stirred together.
    Combine the cornstarch and water in a small dish, stirring until smooth. Stir the mixture into the vegetables in the slow cooker.
  • Cooking gravy in the slow cooker.
    Cook, uncovered, 10 more minutes or until thickened.
  • Louisiana-Style Smothered Pork Chop on a plate with rice and green onion.
    Spoon the rice onto serving plates and top with the pork chops. Spoon the vegetables and sauce over the pork chops. Sprinkle with green onions and serve with hot sauce, if desired.
