Ingredients
- 5 cloves garlic smashed and finely chopped
- 2 - inch piece ginger grated
- 1/2 cup red wine vinegar
- 1/2 cup soy sauce
- 1 cup pineapple juice
- 1 cup oyster sauce
- 1 large orange juiced and zested
- 3 - star anise
- 1/2 cup brown sugar
- 2 tablespoons garlic chili paste
- 5 pounds pork roast

Step 1Mix all ingredients together and marinade for 24 to 48 hours.

Step 2Remove pork from marinade. Pour marinade into a saucepan and reduce until thickened about 15 minutes.

Step 4Place pork in roasting pan with a rack. Pour 1 cup water in bottom of roaster. Brush sauce all over pork. Roast pork at 350 degrees. basting with sauce every 15 minutes for 1 and 1/2 hours. Serve with sauce over top.
