The last time I spent a Christmas day with someone other than my family has been about 20 years until yesterday. Tony & I were invited to our friend Megan & Chris' house to have dinner with them. She had an amazing dinner & sent us home with a goody bag. Well, how could I not make an "open face" sandwich w/leftover ham and Megan's homemade ham gravy which was outstanding!!! Now, my husband doesn't eat cooked kale but this sandwich packed so much flavor he never once mentioned that he didn't like the greens. No doubt I will be making this again next time we have ham.

Ingredients

  • 2 medium ham slices, thick cut
  • 1/2 - 1 cups fresh kale, chopped
  • 4 - 6 slices smoked gouda
  • 1 1/2 cups mashed potatoes, refrigerated
  • 4 tablespoons tapenade, roasted red mixture
  • 3 tablespoons flour or corn starch
  • 1/4 - 1/2 cup homemade ham gravy
  • 2 slices bread, thick cut and toasted
  • 2 pinches garlic powder
  • 1 pinch onion salt
  • 1 - 2 tablespoons butter & a little oil to fry cakes in

How To Make hamtastic holiday sandwich

  • Step 1
    Get your mashed potatoes out of the refrigerator and add your tapenade to 1 1/2 cups of potatoes. Form into a patty and drop down into some flour. Lightly coat. Heat butter or oil in pan till hot and add your mashed potato cakes. Cook till crisp on both sides. While cooking the cakes add your ham slices into the pan as well. Once the cakes are done place them in a bowl covered to keep warm. Add your sliced cheese on top of your ham in pan. Add a little water to pan and cover with lid. Let the steam melt the cheese on the ham.
  • Step 2
    While cakes are cooking add your chopped kale to another pan w/butter and cook down for about 10 minutes. Add your garlic powder and onion salt to greens. Heat your leftover gravy in a small pan on low heat till hot.
  • Step 3
    Toast your slices of bread. This is one decadent open face sandwich with your toasted bread on the bottom, add your sautéed kale, ham slice w/gouda, 2 mashed potato cakes and then pour that amazing ham gravy over the top of your sandwiches.
