ham balls in orange glaze

This is a recipe from my Gram...only change I made is I double the sauce...delicious! Enjoy!

Ingredients

  • 1 pound ground ham - i took a package of ham chunks and shred in my food processor
  • 1/2- 3/4 pounds ground pork
  • 1 - 1 1/2 cups crushed cracker crumbs - i use a whole sleeve of crackers
  • 2 - eggs
  • 1/2 teaspoon dried mustard
  • 1/2 cup minced onion
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • GLAZE - CAN HALVE RECIPE, I DOUBLE, AS WE LOVE THE SAUCE AND I FREEZE LEFTOVERS - RECIPE IS FOR SINGLE BATCH
  • 1/3 - 1/2 cup packed dark brown sugar
  • 1 1/2 tablespoons corn starch
  • 1/4 teaspoon each - dried mustard & ground cloves
  • 1 1/2 cups orange juice
  • - some minced red or green peppers - optional

How To Make ham balls in orange glaze

  • Step 1
    Preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. Set aside In a bowl, add the ground ham, pork, onion, mustard, eggs, crackers, salt, pepper and milk - mix well.
  • Step 2
    Make balls about the size of a golf ball and place in prepared dish. It's okay if touching.
  • Step 3
    Place on oven for 30 minutes or until firm and browning some.
  • Step 4
    While ham balls bake, make the glaze. In a dutch oven or large saucepan - mix brown sugar, mustard,cloves and cornstarch. Over medium heat, stir in the orange juice, whisk until well blended and continue cooking until sauce thickens.
  • Step 5
    When ham balls are finished baking, drain if need be. Place in the sauce and simmer for 15 minutes.
  • Step 6
    Serve hot. I've also prepared these ahead and kept warm for parties in crock pot on low setting.
