The Chorizo and wine make this dish all grown up but still kid friendly

Ingredients

  • 1 bag frozen tater tots
  • 2 cups mexican blend shredded cheese
  • 1 pound chorizo
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • - salt and pepper to taste
  • 1/2 cup dry red wine
  • 1 medium jar salsa
  • 1 pint sour cream
  • 1/4 cup cilantro chopped
  • 3 medium green onions chopped
  • 1 small jalapeno seeded and minced

How To Make grown- up tater tot nachos

  • Step 1
    Add oil to pan saute onions, garlic, and jalapeno until softened. Add red wine and reduce until almost evaporated. Add Chorizo and cook until done. Stir in jar of salsa. Season with salt and pepper.
  • Step 2
    Meanwhile in 425 degree oven bake tater tots in single layer on baking sheet until crispy.
  • Step 3
    In greased baking pan add tater tots then top with meat mixture then cheese. Put back in oven until cheese is melted.
  • Step 4
    Remove from oven and top with green onions, cilantro and sour cream. Serve immediately.
