When fresh squash is in season I love cooking this recipe up with some Baked Pork Chops and Fried Sweet Potatoe Patties..........yum. Enjoy!

    squash (sliced)
  • 1 pkg
  • 2
    onions, diced
  • ·
    salt and pepper to taste
  • 1 tsp
  • 2 Tbsp
    olive oil

How to Make Fried Squash and Bacon


  1. Chop and fry up bacon in large skillet or pot. Save bacon grease in pot. Add in onions to hot bacon grease and let tenderize and brown a little. Slice up squash and add to hot bacon grease and onion mixture along with 2 tbsp of EVOO (Extra Virgin Olive Oil). Add 1 tsp of sugar, salt and pepper to taste. Cook on Medium heat. Let cook until they start to tenderize and turn a slight golden brown, then add in bacon and let cook until squash is completely tender, browned and done. Serve with Baked Pork Chops or any of your favorite meats. Enjoy!!!
