easy pork roast and beans

Wanted to pretend it was summer so I made a summery meal. Baked beans, pork roast, mashed cauliflower, and deviled eggs.

Ingredients

  • 1 small boneless pork roast
  • 1 can northern beans, lightly drained
  • 1 can chili beans, lightly drained
  • 1/3 cup brown sugar, firmly packed
  • 1.4 cups molasses
  • 1 teaspoon diced garlic from a jar
  • 1 small onion, diced
  • - any pork rub or seasoning. i used grill mates pork rub that i found at family dollar for $2.

How To Make easy pork roast and beans

  • Step 1
    Preheat oven to 325 degrees. Rub the roast with the rub and put fat side down in a covered baking dish in the oven. In another baking dish put the beans, molasses, onion, garlic and sugar together and place in oven. NOTE: I didn't combine the first 1 1/2 hours so the grease wouldn't be in the beans.

    After an hour and a half remove the pork roast and place fat side up into the beans dish and continue baking for another 1 1/2 hours decreasing the heat to 300 degrees.
