crispy brussels sprouts with andouille
It's Fat Tuesday but I'm on the Wahls Protocol Paleo diet. I wanted to fix something yummy that was within the parameters of the diet. Looked in my fridge and came up with two tastes I love that I thought might go together. I was right! We cleaned our plates.

Sometimes simple recipes are the most delicious. These Brussels sprouts are fabulous. Slightly crisp on the outside and tender inside. The hearty andouille sausage adds a nice smoky flavor and makes this is a filling main course. Even if you aren't on the paleo diet, you'll enjoy this. It's so good!

Ingredients
- 1 tablespoon coconut oil
- 1 pound fresh organic Brussels sprouts
- 1 package andouille sausage (I got gluten-free, 4 to a package from Whole Foods)
- - salt and pepper, to taste
How To Make crispy brussels sprouts with andouille

Step 1Cut the Brussels sprouts in half.

Step 2Slice up the andouille sausage.

Step 3Melt the coconut oil. Toss with the Brussels sprouts coating them.

Step 4Add the andouille sausage.

Step 5Bake for 45 minutes uncovered at 350 degrees. Stir halfway through baking.
