citrus & salsa roast pork tenderloins

We love this and it is so quick and easy. I serve with white rice and a baby spinach salad.

Ingredients

  • 1 jar 11 oz. chunky salsa (mild-medium-hot)
  • 1 can mandarin orange segments (drained)
  • 2 - (1 pound each) pork tenderloins
  • 1 teaspoon olive oil
  • - creole seasoning i like tony's
  • 1 - lime cut in wedges

How To Make citrus & salsa roast pork tenderloins

  • Step 1
    preheat oven to 425.
  • Step 2
    mix the salsa and orange in small bowl
  • Step 3
    place pork in a 3-quart shallow baking pan.
  • Step 4
    Rub the pork with oil,sprinkle lightly with creole seasoning. The seasoning can be hot so go easy.
  • Step 5
    pour salsa mix over pork
  • Step 6
    bake for 35 min or until pork is cooked through.
  • Step 7
    remove the pork from pan,cover with tin foil. let stand for 10 min. Serve with lime.
  • Step 8
    you can use pineapple or peaches in place of oranges
