char siu (chinese bbq pork) my way
I tweaked the sauce on this recipe and it is so good I could drink it straight from the cup. Pork is succulent and flavorful.

Ingredients
- 1/8 cup dark soy sauce
- 1/4 cup regular soy sauce
- 1/4 cup hoisin sauce
- 1/2 cup mirin
- 1/8 cup xiao hsing or shaoxing rice wine
- 1 teaspoon chinese five spice powder
- 3 cloves garlic minced
- - 1 inch piece ginger grated
- 1/2 teaspoon sesame oil
- 1/2 teaspoon chinese black vinegar or rice wine vinegar
- 2 pounds pork butt roast
- 1/4 cup scallions chopped for garnish

Step 1Mix all ingredients except pork and scallions together. Marinate the pork overnight.

Step 2Remove pork from marinade and place in roasting pan. Baste with marinade and roast at 350 degrees for 30 minutes.

Step 3Flip roast over and baste with marinade and roast another 30 minutes.

Step 4Finish under broiler for 2 minutes each side. Let rest 10 minutes
