This is an AWESOME family meal! Served with some roasted spuds & sauteed fresh mixed veggies ( white corn, green beans, snap peas, & carrots )

1/4 c
soy sauce, low sodium
1/4 c
jack daniels whiskey
1 Tbsp
splenda/brown sugar blend
3 lb
boneless pork loin


1 Tbsp
dry mustard
1 1/2 tsp
apple cider vinegar
1/3 c
sour cream
1/3 c
mayonnaise or bunyannaise (recipe here on jap)
1 Tbsp
finely chopped green onions
sea salt to taste

How to Make Bunyan's Diabetic Pork Loin w/Mustard Sauce


  • 1Combine the marinade ingredients
  • 2Dump marinade into a large ziplock bag
  • 3Drop in the pork loin
  • 4Seal the bag and shake to coat the pork loin
  • 5open the bag slightly
  • 6Squeeze out as much air as you can
  • 7Seal the bag tightly
  • 8Stash in the fridge overnight
  • 9Preheat the oven to 350
  • 10Take the pork loin out of the marinade
  • 1186 the marinade
  • 12Put the pork loin on a rack in a roasting pan. FAT SIDE UP!
  • 13Roast on the center rack of the oven for an hour. Meat should be 155 degrees internally when you pull it from the oven
  • 14Set the pork loin aside to rest ( at least 30 minutes )
  • 15Dump the vinegar, dry mustard, sour cream, mayo & salt in a bowl
  • 16Whisk thoroughly 'till all ingredients are completely combined
  • 17Slice the pork loin
  • 18Spoon the sauce over the top
  • 19Garnish with the chopped green onions
  • 20Bon Appetite!
