bunyan's diabetic pork loin w/mustard sauce
This is an AWESOME family meal! Served with some roasted spuds & sauteed fresh mixed veggies ( white corn, green beans, snap peas, & carrots )

Ingredients
- MARINADE
- 1/4 cup soy sauce, low sodium
- 1/4 cup jack daniels whiskey
- 1 tablespoon splenda/brown sugar blend
- 3 pounds boneless pork loin
- MUSTARD SAUCE
- 1 tablespoon dry mustard
- 1 1/2 teaspoons apple cider vinegar
- 1/3 cup sour cream
- 1/3 cup mayonnaise or bunyannaise (recipe here on jap)
- 1 tablespoon finely chopped green onions
- - sea salt to taste
How To Make bunyan's diabetic pork loin w/mustard sauce

Step 1Combine the marinade ingredients

Step 2Dump marinade into a large ziplock bag

Step 3Drop in the pork loin

Step 4Seal the bag and shake to coat the pork loin

Step 5open the bag slightly

Step 6Squeeze out as much air as you can

Step 7Seal the bag tightly

Step 8Stash in the fridge overnight

Step 9Preheat the oven to 350

Step 10Take the pork loin out of the marinade

Step 1186 the marinade

Step 12Put the pork loin on a rack in a roasting pan. FAT SIDE UP!

Step 13Roast on the center rack of the oven for an hour. Meat should be 155 degrees internally when you pull it from the oven

Step 14Set the pork loin aside to rest ( at least 30 minutes )

Step 15Dump the vinegar, dry mustard, sour cream, mayo & salt in a bowl

Step 16Whisk thoroughly 'till all ingredients are completely combined

Step 17Slice the pork loin

Step 18Spoon the sauce over the top

Step 19Garnish with the chopped green onions
