Bacon jam may become your new favorite jam after trying this sandwich. Salty, sweet, and smoky, we could eat it by the spoonful. The grilled, toasty bread is a wonderful base for the other sandwich ingredients. Warm chicken, melty cheese, bacon jam, and a hint of Dijon mustard create a wonderful sandwich.

Ingredients
- JALAPENO BACON JAM
- 1 pound good quality bacon
- 1 medium onion, chopped
- 1 jalapeno pepper, seeded and chopped
- 3 cloves garlic, chopped
- 1/2 cup light brown sugar, packed
- 1/4 cup strong brewed black coffee
- 1/4 cup maple syrup
- 1 tablespoon balsamic vinegar
- 1 tablespoon grainy spicy brown mustard
- SANDWICH
- 2 slices favorite grilling bread per sandwich (I used a vegetable loaf) per serving
- 2 - 3 ounces sliced chicken (deli, roasted, grilled or fried) per sandwich
- 2 slices cheddar cheese per sandwich
- Dijon mustard

How To Make bacon jammin' chicken extravaganza sammich

Step 1BACON JAM: Cut bacon into 1-inch pieces. Fry in a large skillet over medium heat until crisp (don't overcook). Drain on paper towels. Discard all but 2 Tbsp bacon grease.

Step 2Sauté onion, garlic, and pepper in reserved bacon grease over medium heat for about 4 to 5 minutes or until vegetables are tender.

Step 3Return bacon to the pan; add remaining ingredients. Bring to a simmer, reduce the heat, and continue to simmer for about 20 minutes or until thickened.

Step 4SANDWICH: Heat griddle over medium heat.

Step 5Butter the outer sides of bread; place on griddle. Spread mustard on the inside of each piece of bread.

Step 6Layer each piece with a slice of cheddar cheese. Then add a layer of chicken on one piece. Top chicken with bacon jam. Then place 2nd slice of cheese, bacon slices, and bread on top. Brown on each side, flipping occasionally to ensure cheese melts and you don’t burn bread.
