1In a skillet with olive oil sauté up a thinly sliced onion and cook til nearly tender. Add thinly cut strips of green pepper and chopped red pepper and cook til tender. Add cut broccoli florets (FRESH!) and stir til those are crisp tender. Add salt and pepper and stir.
In a food processor, swirl a can of drained chickpeas (garbanzo beans) until smooth. Add a tub of deli hummus and mix til smoothed together.
Top a whole wheat thin pizza crust with the hummus and spread out around the pizza. Top with a little cheddar cheese.
Scoop your onion and veggie mixture on top of the crust and spread around making sure all areas get some of each vegetable.
Top with Monterey jack cheese. Garnish with little green onion slices.
Bake at 375 degrees til hot and bubbly. ENJOY!
