I had planned tacos for supper, and forgot to buy taco shells. I had all the rest of the ingredients on hand and came up with this. Very tasty, quick, and easy.

If you want an easy taco-inspired meal, try this taco rigatoni bake. It's a very easy pasta bake. Taco seasoning and taco sauce add lots of flavor to the ground beef. When mixed with the cooked pasta and Mexican cheese, it creates a delicious casserole. Customize with the taco toppings you like, such as tomatoes, black olives, sour cream, etc. An easy weeknight meal your family will enjoy on the next Taco Tuesday.

Ingredients

  • 16 ounces rigatoni pasta
  • 2 pounds ground chuck
  • 2 packages taco seasoning mix (1 oz each)
  • water, per seasoning mix directions
  • 8 ounces taco sauce
  • 2 cups shredded Mexican blend cheese
  • GARNISH
  • 6 stalks green onions, diced
  • 4 ounces black olives, sliced
  • 6 ounces shredded lettuce
  • 2 Roma tomatoes, diced
  • sour cream

How To Make taco rigatoni bake

  • Cook pasta and drain.
    Step 1
    Cook pasta according to package directions. Drain and set aside.
  • Brown ground beef and drain.
    Step 2
    Brown and drain ground chuck.
  • Add taco seasoning and water.
    Step 3
    Add taco seasoning packets. Add the water specified in the taco seasoning directions.
  • Add taco sauce and cook.
    Step 4
    Add taco sauce. Cook according to the taco packet directions.
  • Add half the rigatoni to a baking dish.
    Step 5
    Preheat the oven to 400 degrees F. In a 13x9 pan, sprayed with cooking spray, place half of the rigatoni.
  • Add half the beef and cheese.
    Step 6
    Add half of the meat and half of the shredded cheese. Make sure all of the pasta has some sauce on it.
  • Repeat layers.
    Step 7
    Repeat layers.
  • Bake at 400 degrees until cheese is melted.
    Step 8
    Bake at 400 degrees F until the cheese is melted. Remove from oven.
  • Garnish with choices of green onion, black olive, lettuce, tomato, salsa, sour cream, etc.
