Ingredients

  • 24 - dry jumbo pasta shells
  • 1 cup chopped onion
  • 1 tablespoon olive oil
  • 14 1/2 ounces ready diced tomatoes with italian seasoning
  • 8 ounces tomato paste with roasted garlic
  • 1 cup chicken broth
  • 2 large eggs, beaten
  • 15 ounces ricotta cheese
  • 8 ounces mozzarella cheese, shredded

How To Make stuffed shells

  • Step 1
    Cook pasta as directed and drain.
  • Step 2
    Saute onion in oil until tender. Stir in undrained tomatoes, sauce, paste and broth.
  • Step 3
    Combine eggs, ricotta and 1 cup of mozzarella cheese. Spoon filling into shells. Arrange in 3 quart baking dish.
  • Step 4
    Spoon sauce over shells. Bake covered 30 minutes at 375. Uncover and sprinkle with remaining mozzarella and bake another 10 minutes or until cheese is melted.
