Ingredients

  • 24
    dry jumbo pasta shells
  • 1 c
    chopped onion
  • 1 Tbsp
    olive oil
  • 14 1/2 oz
    ready diced tomatoes with italian seasoning
  • 8 oz
    tomato paste with roasted garlic
  • 1 c
    chicken broth
  • 2 large
    eggs, beaten
  • 15 oz
    ricotta cheese
  • 8 oz
    mozzarella cheese, shredded

How to Make STUFFED SHELLS

Step-by-Step

  1. Cook pasta as directed and drain.
  2. Saute onion in oil until tender. Stir in undrained tomatoes, sauce, paste and broth.
  3. Combine eggs, ricotta and 1 cup of mozzarella cheese. Spoon filling into shells. Arrange in 3 quart baking dish.
  4. Spoon sauce over shells. Bake covered 30 minutes at 375. Uncover and sprinkle with remaining mozzarella and bake another 10 minutes or until cheese is melted.
