skillet jackpot casserole
My mother use to make this as an oven casserole when I was a child. I decided to jazz it up a little bit and cook it on the stovetop to avoid heating up the oven during the summer. It's a quick after work dinner to make that will please adults and children.

Ingredients
- 1 box macaroni, cooked
- 1 can tomato sauce (15 oz)
- 1 can corn, drained
- 1 - onions, yellow, medium, diced
- 1 pound ground beef
- 1 package taco seasoning mix
- 1 cup cheese, shredded
How To Make skillet jackpot casserole

Step 1Cook macaroni, rinse and set aside. Dice onion.

Step 2In a non stick skillet, cook onion until translucent and add LEAN ground beef, cook until done. Drain.

Step 3On medium heat, add tomato sauce (15 oz), drained corn, and half of sauce can of water to meat/onion mixture. Stir in taco seasoning and warm through.

Step 4Add cooked macaroni to above mixture until desired ratio of macaroni to meat mixture, warm through.

Step 5Add shredded cheese to top of meat/macaroni mixture and turn heat down to medium low until cheese melts. I used a jack & cheddar mix. Serve.
