"plump up the veggie" spaghetti sauce
I'm always bulking up recipes with veggies to get in that extra nutrition especially (originally) for children and now grandchildren. Amazing how if they don't taste a veggie per se, they devour them.

8-12 . Freezes well to sit out in smaller portion and flavor better with every reheat we think.
Ingredients
- 1 - 2# - gr. bee, gr. turkey, gr. lamb (protein of personal taste)
- 1 cup onion, chopped fine as desired
- 3 stalks ribs, celery, chopped " "
- 1 cup mushroom, chopped " "
- 1 c. cup carrots, chopped " "
- 1/2 cup sweet peppers, chopped " "
- 1 1/2 teaspoons crushed garlic or, up to double amt as desired
- 3/4 teaspoon baking powder
- 2 tablespoons br. sugar or preferred alternative subtstitute
- 1 teaspoon salt
- 1-2 teaspoon grandualated white sugar or preferred subsititute
- 1 teaspoon oregano
- 1-2 teaspoon chili powder
- 1-2 teaspoon smoked paprika
- 1-2 teaspoon g. mustard
- 1/2 cup ketchup
- 2 cans stewed tomatoes
- 1-2 kilogram c0mmercial preferred spaghetti sauce. can use bland generic on sale as other ingredients are really the flavor boost after all.
How To Make "plump up the veggie" spaghetti sauce

Step 1Lightly sauté veggies and spices in pan with minimal amt. of olive oil.

Step 2Combine sauté mix, browned protein, and other ingredients in crock pot or large soup kettle.

Step 3I turn it on low with an occasional stir during the course of my day or crock pot on low 4-8 hrs.

Step 4Serve over any type of prepared pasta, Freezes well in smaller quantities so you just use amount desired for a lot of meals if not hosting a group of 8-12 in one sitting. Sdd a salad and garlic bread - done.
