I found this on facebook and just had to try it. Its such a nice warm dish perfect for cold winter nights. You can add roasted chicken to this recipe too.

Ingredients For monterey jack spaghetti

  • 8 oz
    spaghetti, broken into 2 inch pieces
  • 2
    eggs
  • 1/2 c
    grated parmesan cheese
  • 1/2 c
    sour cream
  • 1/2 tsp
    garlic powder
  • 4 c
    shredded monteray jack cheese
  • 2 pkg
    ( 10 oz ) frozen, chopped spinach, thawed & drained
  • 1 lg
    can can of durkee french fried onion rings, divided

How To Make monterey jack spaghetti

    Cook spaghetti to pkg directions

    In a medium bowl, beat eggs, add sour cream, Parmesan cheese & garlic powder.

    Drain spaghetti & add to egg mixture w/ Monterey Jack cheese, spinach & 1/2 the onions
  • 4
    Put in greased 2 qt. casserole & bake @ 350 degrees for 45 mins, covered. Last 5 minutes, add the remaining onions & enjoy
