My family and I LOVE Mexican food! This is something just a bit different, and removing the bread (tortillas) from the equation. ( I use the whole wheat pasta, to make it even healthier!) Quick & easy, this is one I fix on a particularly busy night!

Ingredients

1 lb
ground beef, lean
1
large onion, chopped
4 c
water
1 can(s)
whole kernel corn, drained
1 can(s)
diced tomatoes, undrained
2 pkg
dry taco seasoning mix
8 oz
spiral pasta

How to Make Mexican Twist

Step-by-Step

  • 1In a 6-quart soup pot, over high heat, brown ground beef and onion 8-10 minutes, until no pink remains in beef and onion is tender.
  • 2Add remaining ingredients except pasta; mix well and bring to a boil.
  • 3Once at a boil, stir in pasta. Reduce heat to low, cover, and simmer 15-18 minutes, or until pasta is tender.
