mexican twist
My family and I LOVE Mexican food! This is something just a bit different, and removing the bread (tortillas) from the equation. ( I use the whole wheat pasta, to make it even healthier!) Quick & easy, this is one I fix on a particularly busy night!

Ingredients
- 1 pound ground beef, lean
- 1 - large onion, chopped
- 4 cups water
- 1 can whole kernel corn, drained
- 1 can diced tomatoes, undrained
- 2 packages dry taco seasoning mix
- 8 ounces spiral pasta
How To Make mexican twist

Step 1In a 6-quart soup pot, over high heat, brown ground beef and onion 8-10 minutes, until no pink remains in beef and onion is tender.

Step 2Add remaining ingredients except pasta; mix well and bring to a boil.

Step 3Once at a boil, stir in pasta. Reduce heat to low, cover, and simmer 15-18 minutes, or until pasta is tender.
